I hope you had some fun this past week. Our favorite laugh-out-loud this week came from an unexpected source … an obituary that’s gone viral. Maybe you’ve seen it, but if not — please take time for this! It’ll definitely give you a smile and a lift. It might also give you a lot to seriously think about, as it has us. This is a hoot!
After last week’s newsletter, I watched another couple of Chris Wark’s great videos for health and cancer recovery, including one where he fixed black bean and sweet potato burritos for his family. That inspired us to get out our favorite recipe for that … and to head to the store for the finishing flavor on this yummy dish: CILANTRO. (It’s a weird combination, but so delicious!)
Those great burritos inspired us to read up on CILANTRO! By golly, it’s a rocket fuel of nutrients and if you love it, we’ve even learned a way to keep it fresh in the refrigerator without getting slimy in the bag :0) Read on!

After last week’s newsletter on cancer, I just want to make sure that everyone knows how helpful the tea is for dealing with the side effects of chemo — or any heavy pharmaceutical drug for that matter. This email from a year or so ago means the world to us!

It was so funny — our daughter Emily texted us her sweet potato and black bean burrito recipe the day after we made ours, with the message “This is one of our favorites … you should try it!” We texted back that we were sitting down to leftovers! So we’re not the only ones who love this unusual dish.
When I told Emily about the Cilantro health benefits, she said: “The only problem with it is that it goes bad so fast in the fridge.”
Our research and the article we found has the answer. This trick WORKS so cilantro can last up to 10 days!
Here’s how: Buy the bunch at the store and rinse it off in the sink when you get home. Shake off excess water. Then put it upright in a container that has 2-3 inches of water. Put a plastic bag over the top. Then keep it in the fridge. I did it immediately and found the perfect spot is in a side shelf of the fridge door.
After reading the benefits, I’ve started munching on a bit of it every morning along with the handful of spinach I eat on the way to the gym. It’s rather a tasty little mini-salad that starts the day right! Here are the recipes and the article.

Fabulous Sweet Potato Enchiladas
1/2 cup vegetable broth divided (I use veggie bouillon cubes)
1 medium onion, diced
5 cloves garlic, minced (or 1 tsp. garlic powder)
1 tsp. coriander (don’t opt on this — it’s delicious!)2 tsp. cumin (if desired)
2 cups fresh spinach, chopped
1 can refried black beans
4 Tbsp. low sodium soy sauce
3 cups cooked, chopped sweet potatoes
(We usually do these in the steamer — way less work! Cut in quarters and peel after cooking … or boil if you don’t have a steamer.
10 large tortillas
Garnish: Salsa, lots of cilantro, fresh lime juice, cumin.
1) Heat 2 Tbsp. of the veggie broth in a medium-sized skillet over medium high heat. Add onion and garlic. Cook a nd stir until onion is transluscent. Add coriander and cumin.
2) Add remaining vegetable broth, spinach, the refried black beans, and sweet potatoes. Cook for 3-5 minutes. Remove from heat.
3) Warm the tortillas in a large skillet by flipping them on each side at medium high heat. Add the sweet potato and black bean mixture. Fold in thirds, and serve!
4) Let everyone garnish however they’d like with lots of salsa, cilantro, and fresh squeezed lime juice.
FAVORITE BLACK BEAN SOUP
This is so easy that we should all be enjoying it frequently!
2 cans of black beans, rinsed and drained
2 Veggie bouillon cubes
2 cups of water
1 medium chopped onion
1 Tsp. garlic powder
Cooked brown rice
In a large saucepan, blend all ingredients but rice. Gently bring to a boil and let it cook at a medium heat until the onions are cooked.
Serve with a scoop of brown rice and garnish with CILANTRO and lime juice. We like to even finely chop up the lime and add it for an extra burst of flavor.
We enjoyed our black beans and cilan tro so much that Bob said, “Are there health benefits to it?” Wow, are there ever!
