Father’s Day Chocolate Banana Muffin Recipe

Hi there!  And happy Father’s Day weekend!  What will you do to honor the special dads and fathers in your life? Our best Father’s Day present includes YOU! We just got the go-ahead to tell you, that our son Spencer and his wife, Brittany, are expecting!  By next year he’ll be a father :0) As you know, he and our son Cooper are heading up the tea in capsule form for missionaries ( so the cute photo below says it all:



We’ve got some fun adventures for our own Father’s Day that I’ll tell you about next week.  Truly … where would we be without fathers?!  I’ll be making the muffins below for Bob’s Father’s Day Breakfast …. he loves muffins and we joke about opening a little bakery called “Nuffin’ But Muffins.”

Oh, my goodness.  So much time on the phone this week with dear people talking … ecstatic about the socks and so grateful for the tea.

You can read our story about Delores, 81, whose brother Richard (unbelievably young at 87) shared the socks with her over Memorial Day weekend.  (The cute photo of her was in her younger years, but that sparkle is still there!) She’s been wearing a surgical brace and using a cane for the last 3-4 years after a terrible complex ankle fracture.  Her doctors have been wanting to do reconstructive surgery the whole time, but she feels she’s too old for that.  Would you believe … after putting on the socks, she walked unaided for the rest of the weekend and left the brace at Richard’s when it was time to go home several days later?!?!  She’s gone for three weeks without either! My friend Sandra, whose story I told you with her awful glue-gun burn that turned into a wound, visited me this week. She was marveling about how the tea had helped her, lamenting that she didn’t just start out with it from the day of the burn.  She also gave the tea the perfect name:  “The Poor Man’s Solution.” “People with no money need to  know that a package of tea placed on a wound heals the best and the fastest!  It saves on doctor trips and medicine! I delayed going to the doctor because of the expense.  It got so much worse. Even after visiting the doctor, what finally did the trick was the tea!”

Then she texted me later saying, “People who don’t heal well, who have compromised health, NEED to know about this. Carolyn, it’s a humanitarian mission for you!”  I appreciate that …. and the tea bags that helped her serious burn/wound finally heal.

Father’s Day Chocolate Banana Muffin Recipe

As you know, we’re 85-90% whole food, plant based eaters.  The 10-15% percent that we’re not is when we socialize with others and special occasions.

I don’t do nearly the baking I used to do with our family grown and gone and how our eating has changed, but still you “need” these treats!

We usually have bananas at all stages of ripeness for eating.  We freeze them when they get overly ripe for baking and smoothies.

Vegan and whole-food plant based baking often means very basic ingredients that go together quickly. No eggs and whole wheat flour makes baked products heavy and much more filling than with white flour.  We’ve become very fond of these heavier muffins, pancakes, etc.

Fathers Day Chocolate Banana Muffins
(Makes 12 Muffins)

1 1/2 cups whole wheat flour
1/2 cup granulated sugar
1/4 cup Dutch processed cocoa
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
4 ripe bananas (mashed (1 1/2 cup)
1/4 cup coconut oil, melted and cooled
1/4 cup Almond milk
1 tsp. vanilla extract
3/4 cup mini chocolate chips, divided
Chopped nuts (optional, but always for Bob :0)

1.  Preheat oven to 350.  Line muffin tin with liners or spray

2.  In a large bowl whisk together flour, sugar, cocoa, baking soda, baking powder and salt.

3.  In a separate bowl, combine mashed bananas, oil, almond milk and vanilla extract.  Add the banana mixture to the dry ingredients and stir until combined.  Add 1/2 the choco late chips and optional chopped nuts.

4.  Spoon into prepared cups.  Sprinkle with remaining chocolate chips. Bake for 18-20 minutes or until a toothpick comes out clean.  Remove from oven and let cook for 10 mintures before serving.
